The recent partnership between Lou Malnati’s, a fervent advocate of Chicago’s deep plate pizza scene, and the incredible Mike’s Hot Honey, a New York-based restaurant, is the focal point of this fiery legend. The pizza they created has created a stir in the culinary community. Many people are surprised by this partnership, particularly in light of the long-running rivalry between New York and Chicago for supremacy in pizza. But it’s been demonstrated that combining the fiery sweetness of New York hot honey with the deep flavor of Chicago-style pizza produces an absolutely amazing outcome.

The Hot Honey Thicker style of Lou x Mike With Lou Malnati’s signature outside layer, mozzarella cheddar, frankfurter, proportioned pepperoni, giardiniera, and a generous amount of Mike’s Hot Honey pizza is a marvel in and of itself. Given that hot honey is currently one of the most popular (joke expected) food trends, the timing couldn’t have been more perfect. I’ve been a longtime fan of Mike’s Hot Honey, so I can attest to the fact that this pizza is a huge plus. The combination of sweetness and heat gives the pizza a completely new dimension, making it an irresistible feast.

A much more pressing need is met here by the calibrated pepperoni, which I particularly love for its freshness and which truly gets those lovely sprinklings of warm honey. There have been several attempts to construct a home version of the hot honey pizza, so if you don’t have access to store-bought pizza, you can follow the recipe and try it out for yourself.

Ingredients:

  • Sheet-Pan Pizza Dough
  • 1 28-ounce can whole peeled tomatoes, drained 
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon hot honey, plus more for drizzling 
  • Kosher salt and freshly ground pepper
  • 1/4 cup grated parmesan cheese
  • 12 ounces whole-milk mozzarella cheese, shredded (about 3 cups) 
  • 1 1/2 6-ounce logs pepperoni in natural casings, sliced 1/8 inch thick
  • 1/2 cup sliced hot pickled cherry peppers, drained

Steps to Make – The remarkable thing about this pizza is its pizza sauce:

  1. Make Sheet-Pan Pizza Dough. During the final rise, put a pizza stone or inverted baking sheet in the lower third of the oven and preheat to 500˚ for 1 hour.
  2. Meanwhile, make the tomato sauce: Put the tomatoes in a medium saucepan and break them up with your hands or a wooden spoon. Add the olive oil, garlic, oregano, hot honey, 1/2 teaspoon salt and a few grinds of pepper. Bring to a simmer, stirring often and crushing the tomatoes with a wooden spoon. Continue to simmer, crushing the tomatoes, until the sauce thickens slightly, about 5 minutes. Let cool. 
  3. Sprinkle 2 tablespoons parmesan over the dough. Sprinkle the mozzarella on top, leaving a 1/2-inch border. Spoon the tomato sauce over the top. Top with the pepperoni and cherry peppers. 
  4. Put the baking sheet directly on the hot stone and bake until the crust is browned around the edges and the pepperoni is crisp, 15 to 20 minutes. Sprinkle the remaining 2 tablespoons parmesan over the pizza. Let cool slightly.
  5. Loosen the edges of the pizza with an offset spatula, then loosen the bottom. Slide the pizza onto a cutting board; cut into squares. Drizzle with hot honey.
