This delectable lunch, which includes bacon, eggs, potato browns, sautéed mushrooms in butter, pizza, and one and a half kiwis, is the perfect way to start the day off correctly. You read correctly: breakfast will be pizza. It’s delicious, we promise.
In addition to being tasty and satisfying, this breakfast is also simple to prepare with basic ingredients. You can either prepare your own pizza using store-bought dough and your own toppings, or you can use leftover pizza from the previous evening. You can save time and dishes by preparing the bacon, eggs, and potato browns in the same skillet.
Ingredient selection is up to personal preference. You can refer to my choices if it is more difficult to make a decision.

Pizza:
- Pizza (leftover or homemade, 4 slices)
- Bacon and hash browns:
- Bacon (4 slices)
- Hash browns (2 cups, frozen or homemade)
- Salt and black pepper (to taste)

Scrambled Eggs:
- Eggs (4)
- Milk (1 tablespoon)
- Dried parsley (1/4 teaspoon)
- Butter (1 tablespoon)

Scrambled Mushrooms:
- Mushrooms (2 cups, sliced)
- Butter (2 tablespoons)
- Fresh or dried thyme (1/2 teaspoon)

Other:
- Kiwi fruit (2, halved)
- Parmesan cheese (to taste, optional)
- Preheat oven to 400 degrees F (200 degrees C). Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and add hash browns and sliced mushrooms until browned and tender.
- Place pizza crusts upside down on cookie sheets and bake for 5 to 7 minutes. Do not allow to brown.
- Beat eggs, milk, salt and pepper. In a separate pan, scramble the eggs until set.

Before serving, place the pizza pieces on four plates and top with grated Parmesan cheese if desired. Place eggs, bacon, potato browns, and mushrooms on top of each platter. Cut the kiwis in half, then scoop out the meat with a spoon. Enjoy your perfect morning with coffee, tea, or juice.
